They met while studying winemaking in Stellenbosch. After travelling and working vintages around the world together in Napa Valley, Western Australia, St. Emilion, Clare Valley and Mosel, they returned home to make wine out of many old dry farmed bush vine vineyards in South Africa.\u003c\/p\u003e\n\u003cp\u003eBoth Chris and Suzaan believe that great wines are 99% made in the vineyard and 1% made in the winery. Their aim is to capture the ‘voice of the land’ by minimal intervention in the winery. The grapes are cooled, hand sorted, and whole bunch pressed. The resulting juice is lightly settled, run off into a neutral vessel and then left alone for the ambient yeasts to ferment.\u003c\/p\u003e\n\u003cp\u003eAlheit only produces white wines because not only do they love white wines, they believe that the Cape is capable of producing world class whites. Their apex wine, Cartology (study of maps), symbolises their exploration of the Cape's heritage as the grapes used in Cartology: 90% Chenin Blanc and 10% Semillon were brought to the Cape as far back as 1655. As a result, these varieties have had centuries to adapt to the land and the Mediterranean climate. The vines for Cartology range from 35 and 84 years old. After fermentation, the wine stays on its lees for another year and then four months in tank before bottling with minimal SO2 used. Cartology is undeniably a flag bearer for the treasured old vineyards of South Africa, the depth and characteristics of this wine is uniquely South African. The wine has a complex nose of citrus and pear with some savouriness and toastiness. The palate is vibrant, seamless, full of energy and focused. The juice was very lightly settled (we like cloudy raw juice) with no additions to the raw juice, wild fermentation took place in old barrels of various sizes. Fermentation lasted for about two months, except for the Roussanne which fermented for about nine months as usual. The wine was kept on lees for around twelve months, then rested in tank on fine lees without fining for a further six months prior to bottling. The nose is exotic, showing stone fruit and talcum, lemon rind and baking spice. The wine has an absolutely towering presence on the palate, robust flavours cut through by rapier acidity. Fermentation can last anywhere between 3 weeks and 11 months. The wine is kept on lees for around twelve months, then rested in tank on fine lees without fining for a further six months prior to bottling. Very simple, careful winemaking.\u003c\/p\u003e\n\u003c\/div\u003e\n\u003ch2 id=\"tasting-notes\" class=\"wine-vineyards__card-title\"\u003eTASTING NOTES\u003c\/h2\u003e\n\u003cdiv class=\"mb-6\"\u003e\n\u003cp\u003eThis is the tenth bottling of Cartology, making it a rather special milestone for us. I personally put a great deal of thought into the assembly of this wine, wanting to bottle something beautiful to celebrate the tenth vintage.\u003c\/p\u003e\n\u003cp\u003eThe wine looks alive and bright, pale gold in colour. Citrus rind and pear ring clear on the nose…there’s a faint herbal\/stony echo and some soft cardamon-like spcie here too. The palate is sappy and layered, fine and dry with lovely cleansing acidity. Long finish.
