To achieve finesse and elegance, only juice from the first pressing is used. Some of the wines have first fermentation in barrel to enhance richness and complexity. Multi-vintages wine used a very high proportion of reserve wines (up to 50%). Premiere Cuvee has three years ageing on lees while Nec Plus Ultra (N.P.U.) has ageing up to eight to ten years. Dosage is typically very low, less than 6g\/L to respect the original purity of the wines.
