The buildings served as monastery and winery since then.\u003c\/p\u003e\n\u003cp\u003eThey decided to create a environment where fauna and flora will benefit each other, in harmony, a safe haven for birds, animals, insects, frogs and even bats that all contribute to the success of nature. Special attention has been brought to the selection of plants and trees planted on the estate.\u003c\/p\u003e\n\u003cp\u003eThe vineyards are composed of Cabernet franc, Cabernet Sauvignon, Chenin Blanc and Chardonnay, over 15 hectares in total, located on a plateau composed of a small pocket of flint soils, with some iron oxide component, contrasting with the typical Turonian limestone of the region.\u003c\/p\u003e\n\u003cp\u003eIn the cellar, they use mostly clay-based concrete eggs, crafted especially for the winery. Native yeast fermentation in egg-shaped concrete tanks. No racking before aging. Winemaking is approached naturally, so depending on the vintage, there is spontaneous malolactic fermentation.
