The AOC Pernand-Vergelesses covers 123 hectares: 90 hectares of red of which 44 are Premier Cru and 53 of white of which 17 are Premier Cru.\u003c\/p\u003e\n\u003cp\u003eIn this parcel of \"Sous Frétille\" with approximately seven ouvrées facing south-southwest, the vines' average age is 30 years and they are planted on a foundation of white marl. These soils give wines called \"de Combe\", or \"from the valley\", and are direct and cutting in their acidity.\u003c\/p\u003e\n\u003cp\u003eSous Frétille\" has been classified as a Premier Cru since 2001 (but only for white wines.) The word \"Frétille\" is a derivation of \"forestelle\", or forest in old French. Hence, \"Sous Frétille\" indiquates the geographic location of the parcel, just under the forest.\u003c\/p\u003e\n\u003cp\u003eAll our fruit is hand-harvested. Thanks to pneumatic presses, we can calibrate our presses to fit the quality of the grapes and the profile of the vintage. After a light settling, the musts are placed mostly in 600-liter barrels as well as in 228-liter barrels, where the alcoholic and malolactic fermentations take place.\u003c\/p\u003e\n\u003cp\u003eWe use approximately five to twenty percent new casks primarily made from Allier wood that sees a long yet light toasting. The first racking occurs after about one year of wood aging, after which begins the second, four- to six-month phase in stainless steel, which preserves the wine's freshness and tension.
