Cool climate single vineyard origin: Derwent Valley Tasmania 42.6°S.  Handpicked on a fruit day after the harvest moon.  Whole bunch wild ferment with gentle pigeage.  Matured 12 months en seasoned demi-muid.  Basket pressed, bottled unfined and unfiltered with perfect natural balance.

Simha means lion in Sanskrit. The domaine was started by Nav Singh and Louise Radman in Hobart, Tasmania. Husband and wife are a micro négociant, purchasing grapes from long term growers to make small batches from Derwent Valley. Prior to starting his own winery, Nav worked at: Domaine de l’Arlot, Château Le Pin, Vieux Château Certain and Château d’Yquem. Winemaking is with a light touch guided by the biodynamic calendar. All grapes are harvested on a flower or fruit day. Whole bunches are used for the entire production, which is fermented with ambient yeasts. All wines are unfined and unfiltered with minimal sulphur dioxide.
