This wine was born in 2008, from the desire of head viticulturalist and winemaker, Ayana Misawa, to make a dry rosé with structure in Japan.  The varietal composition changes from year to year, Merlot, Cabernet Sauvignon, and Cabernet Franc grown at the Misawa Vineyard without herbicides or chemical fertilizers applied are separated into small lots and are fermented separately by direct pressand the Saignée method, followed by maturation in old French oak barrels. By doing so, the wine expresses both the complexity of the varietal characters and the sense of place.

Established in 1923 in Katsunuma, this family-owned winery established by Chotaro Misawa is now run by his fourth-generation successor Shigekazu Misawa, whose daughter Ayana is in charge of winemaking. The main-winery is still in Katsunuma and produces primarily Koshu. Since 1990 the family has been concentrating its efforts on improvements in grape production. The winery’s goal is a wine reflecting a unique combination of soil, sunlight, and altitude. It has been a pioneer in replacing conventional Japanese viniculture with vertical shoot positioning to produce a more richly flavoured grape. The goal is wines that are eco-friendly, with a natural, gallant and quietly elegant taste.
