(Wine Advocate Score 90) Based on the 2016 vintage, the new NV Brut Rosé from Billarcart-Salmon has turned out nicely, mingling notes of red berries and plums with notions of peach, dried flowers and orange rind. Medium to full-bodied, pillowy and elegant, it's bright and charming, with a generous core of fruit, racy acids and a pinpoint mousse. Giving and demonstrative, it's already drinking well.

The secrets of production and the winemaking method of this vintage date back to the origins of Maison BILLECART-SALMON and have been passed down for six generations. This champagne is a rose blend that is the fruit of grapes Chardonnay, Pinot Meunier and Pinot Noir vinified in red. Voted best Champagne Brut Rose by the Revue du Vin de France in 2010, it will delight your taste buds.

Billecart Salmon started in 1818 when Nicolas François Billecart and Elisabeth Salmon united to give birth to their Champagne House. A family story since Louis Salmon, Elisabeth's brother and passionate about oenology, was involved in the production of the wines.  For 7 generations, each member of the family has endeavored to perpetuate the family tradition by remaining faithful to an immutable oath: "to privilege quality, to aim for excellence".

The Champagne of the House is based, above all, on the unique know-how of its men who rigorously pamper a 100-hectare estate and source their grapes from a total area of ​​300 hectares in 40 Champagne vintages.

Most of the grapes used for vinification come from a radius of 20 km around Epernay, where the grands crus of Pinot Noir, Chardonnay and Pinot Meunier coexist in the lands of the Montagne de Reims, the Côte des Whites and the Marne Valley.

The plot of Clos Saint-Hilaire is led by a remarkable management and maintenance of the vines with respect for the environment. Maison Billecart-Salmon has decided to return to ancestral methods by reintroducing the draft horse and sheep. These improve the porosity and biodiversity of the soil: the roots develop in depth and the minerals extracted from the soil promote the growth of smaller and more concentrated grapes, ensuring us the best expression of this unique terroir. Clos Saint-Hilaire gives birth to an exceptional eponymous champagne which bears the name of the patron saint of Mareuil-sur-Aÿ. Made exclusively from Pinot Noir vinified in barrels, it develops rare complexity and astonishing freshness. Eachvintage will not contain more than 3,500 to 6,500 bottles, all numbered.
