Sami-Odi is a small winery in the Barossa Valley focusing only on Syrah producing minuscule quantities. Grapes are sourced from small plots of vines, some of which are very old.
In the vineyards, Sami-Odi adopted organic principles. Extensive care is given to vineyards. Shoot and crop thinning are practiced to improve phenolic ripeness and flavour intensity while maintaining freshness.
Winemaking techniques are also as natural as possible. Grapes are whole-bunch fermented. Only a modest amount of sulphur is added in the winemaking. Pressing is gentle using traditional basket press. The wines are then bottled under gravity without fining and filtration.
