Its bouquet suggests red fruits, especially morello cherry and raspberry, with a woody and spicy note with a touch of pepper. The feeling of a delicate and fruity roundness unfolds on a background of slightly stewed red fruits. The tannic structure is fine, silky but well present. This beautiful balance persists for a very long time in the mouth and lets you appreciate the equilibrium and the fine woodiness.

GEOLOGY
Adjacent to the vines of Savigny and Aloxe-Corton, this plot already existed in the 13th century under the name "Bellus Mons”. Type Soil : Its subsoil is composed of marly-limestone alluvium on a stony background. The pruning is done in Guyot (Poussard) with different works during the green season. (Disbudding, trellising, topping).
 
VINIFICATION
Manual harvest, sorting on vine then on a sorting table (depending on certain years, use of an optical sorter) and then at the winery.
 
AGEING
The grapes after a light crushing and destemming are put whole in stainless steel tanks. A small part of the whole harvest can be incorporated depending on the state of the raw material. After a cold maceration of a few days, the active phase of fermentation takes place with temperature control. During this period, the wine is pumped over and/or punched down. When the fermentation is finished the free-run juice is separated from the solid parts. The grape pomace are pressed, at low pressure, in a pneumatic press. The wines are put into barrels (about 30% new wood) where the maturing process takes place. 14 months for this wine, during which time the malolactic fermentation took place. One month before bottling, the wine from the different barrels is assembled in vats. There is no gluing, just a light lenticular filtration before bottling. Some modifications on the overall technique can be made depending on the vintage. The bottling is done according to the lunar calendar.

The history of Maison Vincent Girardin begins in 1980, when the 11th generation winemaker Vincent Girardin, part of a winemaking family in Santenay whose origins date back to the 17th century, decided to strike out on his own, and began producing wine from two hectares of vines that he had inherited from his parents. Although Vincent’s concentration has centered mainly on the lesser-known appellations of the Côte de Beaune, he has a stunning array of Premier and Grand cru wines from some of the most prestigious appellations in Burgundy. In doing so he respects the most important element of Burgundy, the individuality of the terroirs. All of the Girardin Grands Vins are made from vines managed according to sustainable agriculture principles. They also give preference to the vineyards they purchase grapes from, to be managed by the most natural vinification possible.

In 2012, Vincent Girardin sold his operation to a long-standing partner of the Maison, Mr. Nié, President of the Compagnie des Vins d’Autrefois in Beaune. Eric Germain, winemaker at the domaine since 2000, continues to uphold his philosophy of minimal intervention.
