A straw-yellow and limpid dress. A nose with intense aromas of white peach, fresh pineapple, citrus and some mineral notes. A mouth where one finds a very fresh and fleshy minerality.

GEOLOGY
The vineyards are located in the commune of Meursault. The plot « Les Casse Têtes » is located next to the climate « Les Tessons ». Soil : Clay and limestone composed of blond earth mixed with small pebbles in its lower part, very slighty inclined towards the East. The pruning is done in Guyot (Poussard) with different works during the green season. (Disbudding, trellising, topping).
 
VINIFICATION
Manual harvest, sorting on vine then in the vat and finally pressing (pneumatic press) to obtain a slow extraction.
 
AGEING
Barreling after a slight settling. The grapes are put in French oak barrels of 228 liters (15 % of new barrels) in which the alcoholic and malolactic fermentations in yeasts and native bacteria will take place. Breeding will be long on fine lees for 16 months. Without stirring. One month before bottling, the wine from different barrels is placed in a stainless steel tank for blending. Filling before gluing and light filtration before bottling. Bottling is done according to the lunar calendar.

The history of Maison Vincent Girardin begins in 1980, when the 11th generation winemaker Vincent Girardin, part of a winemaking family in Santenay whose origins date back to the 17th century, decided to strike out on his own, and began producing wine from two hectares of vines that he had inherited from his parents. Although Vincent’s concentration has centered mainly on the lesser-known appellations of the Côte de Beaune, he has a stunning array of Premier and Grand cru wines from some of the most prestigious appellations in Burgundy. In doing so he respects the most important element of Burgundy, the individuality of the terroirs. All of the Girardin Grands Vins are made from vines managed according to sustainable agriculture principles. They also give preference to the vineyards they purchase grapes from, to be managed by the most natural vinification possible.

In 2012, Vincent Girardin sold his operation to a long-standing partner of the Maison, Mr. Nié, President of the Compagnie des Vins d’Autrefois in Beaune. Eric Germain, winemaker at the domaine since 2000, continues to uphold his philosophy of minimal intervention.
