History
Inniskillin, Canada's first estate winery, was founded in 1975 by Donald Ziraldo and Karl Kaiser in Niagara-on-the-Lake, Ontario. Securing the first post-Prohibition winery license in Ontario, they planted Vitis vinifera varieties in 1974, a bold move for the region. In 1978, they relocated to the Brae Burn Estate, restoring a 1920s barn. Inniskillin pioneered Canadian icewine, producing its first Vidal Icewine in 1984 after netting grapes to protect them from birds. The winery gained global acclaim when its 1989 Vidal Icewine won the Grand Prix d’Honneur at Vinexpo in 1991. Since 1994, Inniskillin has operated a second winery in British Columbia's Okanagan Valley. Acquired by Constellation Brands in 2006, it remains a leader in Canadian winemaking.

Viticulture Philosophy
Inniskillin manages 30 acres at its Niagara estate and sources from over 300 acres in the Niagara Peninsula, leveraging the region's unique microclimate and glacial soils. In Okanagan, it cultivates the Dark Horse Vineyard in collaboration with the Okanaqueen Tribe. Focusing on varieties suited to cooler climates, such as Vidal, Riesling, Chardonnay, Pinot Noir, and Cabernet Franc, the winery emphasizes sustainable practices and low-intervention viticulture to highlight terroir, particularly for its signature icewines.

Winemaking Techniques
Inniskillin's icewines, notably Vidal and Cabernet Franc, are made from grapes frozen on the vine, hand-picked, and pressed at sub-zero temperatures to concentrate sugars and acidity. Table wines, including Chardonnay and Pinot Noir, are fermented with native yeasts in stainless steel or oak, with reds often aged in French barriques for structure. The winery balances tradition and innovation, using clean energy from grape byproducts since 2017. Winemaker Bruce Nicholson and Nicholas Gizuk craft VQA wines with precision, ensuring varietal purity.

Critics and Journalist Praises
Inniskillin's Vidal Icewine is a benchmark, with the 1989 vintage earning the Grand Prix d’Honneur at Vinexpo, redefining Canadian wine globally. Wine Enthusiast named Inniskillin New World Winery of the Year, and Drinks International listed it among the World's 50 Most Admired Wine Brands. The International Wine and Spirits Competition awarded it Sweet Wine Producer of the Year. Critics praise the Vidal Icewine for its “floral, mango, and golden raisin” notes, ideal with desserts or cheeses like Gruyère.
