Farming Rigorous, chemical-free organic methods. To promote soil microbial life and deep rooting, the soil is regularly plowed, canopies are left high with minimal hedging, and yields are strictly restricted to 6-8 bunches per vine.
Winemaking Hand-harvested fruit is fermented using only indigenous yeasts in open vats. Whole-cluster usage is selectively applied based on the parcel. The wines are aged for 12 to 22 months in French oak casks (up to 33% new) and bottled without fining or filtration.
