Collection: Montille

Any lover of Burgundy wine will know Domaine de Montille, one of the greatest estate in the Cote de Beaune and producing some of the most sought after wines in the whole of Burgundy. Wines of Domaine de Montille appeared in virtually every Michelin three stars restaurants in France. Hubert de Montille is well-known for his preference on the minimal use of chaptalization. Wines are of extreme purity. While they may be lean and austere in their youth, they develop magnificently with age. To enjoy them in their youth, remember to allow plenty of aeration time. In fact, Etienne and Alix de Montille (current winemakers of Domaine de Montille) usually open their bottles one day in advance before consumption!

Domaine de Montille is most famous for its red wines. In 2003, Alix and Etienne opened a new negoicant business (Maison Deux Montille) and the focus is on white wines. First and foremost, Alix and Etienne are committed to buy only grapes, not must, from growers that they have built long-term relationships to allow them to have maximum control over quality. Picking is also mostly done by teams directed by Alix. Vinification is done in the same winery facilities as Domaine de Montille. The control Alix and Etienne have essentially meant that these wines are of Domaine quality even if they bear Maison in their names.

Alix's winemaking philosophy is to have minimal intervention and to allow the grapes to express themselves as much as possible. The result? Wines full of character! Alix allows fermentation and malolactic fermentation following their rhythms. She avoid disturbing or manipulating the wine as much as possible. Yeast for fermentation is coming naturally in the air in her cellars. Once malolactic fermentation completed, they are blended together to allow better integration. Since the goal is to produce wine of extreme purity, the use of new casks is very minimal, 10% for village appellation and 15-20% on other wines. The use of SO2 is minimal and only added at the end for bottling.
