Tasting Notes
- Appearance: Pale, brilliant straw-yellow.
- Nose: Fragrant and layered, offering clear aromas of white peach, apricot, honeysuckle, and lime zest, underscored by a subtle flinty, smoky minerality.
- Palate: Light-bodied and juicy with an elegant sweetness. Clean flavours of tree fruit and citrus are enlivened by a driving, laser-like acidity, finishing long, crisp, and slightly saline.
Serving Suggestion
- Temperature: Serve chilled at 8–10°C to allow the balance between the sweetness and acidity to show at its best.
- Decanting: Not necessary, but opening it 10–15 minutes beforehand helps release the mineral aromatics. This wine possesses an exceptional structure that supports continuous development in the cellar over the next 15–20 years.
- Western Pairing: An excellent matchup for spicy Thai curries, glazed ham, roasted pork with apples, or creamy blue cheeses.
- Asian & Cantonese Pairing: The combination of natural residual sugar and crisp, high acidity acts as a great counterweight to local spices and rich, gelatinous meats. It pairs exceptionally well with 避風塘炒蟹 (Typhoon Shelter Spicy Crab), 酸甜咕嚕肉 (Sweet and Sour Pork), or 蜜汁叉燒 (Honey-Glazed Charsiu).
