From Champagne Drappier in France's Urville region, the Carte d'Or Brut NV is a refined blend dominated by Chardonnay (50%) with Pinot Noir and a touch of Pinot Meunier, sourced from Premier and Grand Cru vineyards on chalky marl soils that impart finesse and structure. Base wines from multiple vintages undergo primary fermentation in stainless steel tanks, followed by secondary fermentation in bottle via the traditional method and 3-4 years' lees aging to develop complexity and creaminess. Low dosage emphasizes purity, with one of the lowest sulphur levels in Champagne, yielding a golden sparkling wine with persistent fine mousse and remarkable vibrancy.
