This Spätlese Off Dry (green‑capsule) bottling is sourced from the Bernkasteler Badstube vineyard in the middle Mosel, a classic steep site of weathered slate that produces fragrant, finely structured Rieslings. Late‑harvested Spätlese grapes bring extra ripeness and depth, while the feinherb/off‑dry balance aims for intensity and length without the full richness of dessert styles.
Grapes are hand‑harvested, gently pressed and fermented with natural or carefully selected yeasts, with fermentation stopped before all sugars are consumed to retain a moderate level of residual sweetness. Ageing in stainless steel on fine lees preserves freshness and enhances texture, yielding a wine that is both vivid and polished, with sweetness and acidity in harmonious tension.

Serving and Cellaring
Serve at 8–10°C in small to medium white‑wine glasses, allowing a few minutes in the glass for the orchard‑ and tropical‑fruit notes to open up. This Spätlese Off Dry pairs especially well with Asian cuisine, mildly spicy dishes, pork or duck with fruit accents, rich poultry, and soft or semi‑soft cheeses; it can be enjoyed now or cellared for 15–20 years to develop beeswax, dried‑fruit and petrol nuances while retaining freshness.
