- Appearance: Opaque dark red with deep ruby-garnet reflections.
- Nose: Intensely aromatic and rich. It opens with aromas of super-ripe dried cherries, cocoa nibs, mocha, and root spices, accompanied by cinnamon, sweet cloves, and toasted oak.
- Palate: Dry, full-bodied, and deeply concentrated. The entry delivers a dense wave of liqueur-like fruit and spice that glides across a massive mid-palate, held in check by firm, drying tannins into a long, composed finish.
Serving Suggestion
- Temperature: Serve at 18–20°C in large balloon glasses to allow its complex aromas to unfold.
- Decanting: A generous 1.5-to-2 hour decant is strongly recommended if opening early. Best cellared and enjoyed from 2030 onwards.
- Western Pairing: Braised beef short ribs, venison stew with polenta, slow-cooked lamb shanks, or aged Parmigiano-Reggiano.
- Asian Pairing: Taiwanese braised beef noodle soup, Peking duck, char siu pork, or Korean braised short ribs (Galbi-jim).
