Winemaking Process

Alión’s innovative approach defines this wine. The 2020 vintage, from low-yield vines, undergoes fermentation in stainless steel with a 10–12-day maceration, followed by 12 months in 95% new French oak and 5% American oak barrels for added complexity. Further bottle aging ensures harmony, creating a structured yet fresh wine with long aging potential.
