VINE AGE
40 years
GEOLOGY
The vines are located in the village of Puligny-Montrachet, south of the Côte de Beaune. Puligny-Montrachet is where you can find the most famous Grands Crus vineyards (Bienvenues-Bâtard Montrachet, Bâtard Montrachet, Chevalier Montrachet and Montrachet) Soil: clay-limestone. Average slope. 100% Chardonnay - Guyot with different annual work of the vine (pruning, trellising on wire / knotting, stripping).
VINIFICATION
The grapes are harvested by hand and sorted during the picking. They are pressed in a pneumatic press in order to obtain a slow extraction. After cold settling, then gentle racking, the wine is placed in French oak barrels (20% new barrels). Fermentations (alcoholic and malolactic) can then begin with natural yeasts.
AGING
It lasts 18 months on fine lees. One month before bottling, the wine from the different barrels is placed in a stainless steel tank for assembly. The wine is finally fined and lightly filtered before bottling following the lunar calendar ("fruit" day to obtain a wine with freshness and minerality).
TASTING
NOTES Elegant and rich wine with aromas of white flowers and toasted hazelnuts. In the mouth, the liveliness gives way to elegance.
MEALS
Aperitif, crustaceans, fish and white meats.
