GEOLOGY
The vines are located to the west of the village of Chassagne Montrachet. Soil: Stony, limestone soil with a little clay. The slope is very low. 100% Chardonnay - Guyot with different seasonal processes in the vineyard (pruning, wire trellising / knotting, leaf stripping).
VINIFICATION
The grapes are harvested by hand and sorted during the picking. They are lightly pressed in a pneumatic press to obtain a slow extraction. After a cold settling of 24 hours and a gentle racking, the wine is put in French oak barrels of 228 liters (25% new barrels) for the two fermentations (alcoholic and malolactic) with natural yeasts for 18 months.
AGING
Aging on fine lees. One month before bottling, the wine from the different barrels is placed in a stainless steel tank for assembly. The wine is finally fined and lightly filtered before bottling according to the lunar calendar ("root" day for wines to keep).
TASTING
Rich wine with aromas of ripe fruit. Impressive length and softness on the palate.
