The vines are located in the village of Puligny Montrachet, south of the Côte de Beaune. The “Les Pucelles” climate is one of the most prestigious 1er Cru in Puligny. Located in the northern part of the village near Bienvenues Bâtard Montrachet. Soil: clay-limestone with lots of gravel.  Wine with great finesse and elegance. Aromas of white flowers.

VINEYARD AGE

GEOLOGY
The vines are located in the village of Puligny Montrachet, south of the Côte de Beaune. The “Les Pucelles” climate is one of the most prestigious 1er Cru in Puligny. Located in the northern part of the village near Bienvenues Bâtard Montrachet. Soil: clay-limestone with lots of gravel. The slope is low. 100% Chardonnay - Guyot with different annual work of the vine (pruning, trellising on wire / knotting, stripping).
VINIFICATION
the grapes are harvested by hand and sorted during picking. They are pressed in a pneumatic press at low pressure for slow extraction. Cold settling is then carried out for 12 hours. The juice is put in 228 liter oak barrels (25% new barrels) for the alcoholic fermentation as well as the malolactic fermentation.
AGING
For 18 months on fine lees. One month before bottling, the wine from the different barrels is placed in a stainless steel tank for assembly. The wine is finally fined and lightly filtered before bottling following the lunar calendar.
TASTING
Wine with great finesse and elegance. Aromas of white flowers.
MEALS
Fish, shellfish or white meat accompanied by a cream and cottage cheese sauce.
