Concentrated, Voluminous, and Generously Briny

Sourced from the sun-drenched, highly coveted Vaupulent slopes within the grand Fourchaume umbrella, the 2022 Domaine Billaud-Simon Chablis Premier Cru "Fourchaume" is a masterclass in rich, solar complexity. This prestigious right-bank Premier Cru effortlessly translates the natural warmth of the 2022 vintage into a wine of impressive mid-palate volume, without losing an ounce of its signature coastal energy. It bursts from the glass with a ripe, expressive nose of poached orchard fruits, smoky mineral reduction, iodine, and a faint hint of high-toned sea-spray shells. Medium-bodied, succulent, and deeply concentrated, it coats the mouth in rich citrus and peach oils before resolving into a remarkably persistent, dry, and mouth-watering saline finish.

Terroir, History & Acclaim

Critical Recognition:
Burghound [90-92] pts
Jasper Morris [90-92] pts
  • 90-92 Points - Burghound (Allen Meadows): This is noticeably riper with its smoky aromas of pear liqueur, iodine and suggestion of the phenolic (olive oil nuances). There is also very fine volume to the rich, fleshy and sappy medium weight flavors that possess a mouthcoating and almost creamy texture, all wrapped in a warm, persistent and dry finish.
  • 90-92 Points - Jasper Morris Inside Burgundy: Vinified and aged in stainless steel from one plot in Vaupulans. Mid lemon yellow. The nose is easy-going, with some ripe citrus notes. Pleasingly tangy, with a juicy fruit through the middle, not as classic a Chablis as their Vaillons, with middle weight and length. Drink from 2025-2029. Tasted Jul 2023.
  • The Sun-Drenched Vaupulent Climat: The estate’s Fourchaume holdings are located within the prestigious *Vaupulent* lieu-dit. Facing southwest and sitting on shallow, stony Kimmeridgian limestone soils, this site catches intense afternoon sun. This unique geographic placement coaxes out incredibly rich, dense, and voluminous fruit while the ancient oyster shells underneath maintain a core of pristine salinity.
  • Absolute Purity in Steel: To counteract the natural warmth and opulence of the Vaupulent site, winemaker Olivier Bailly and the Faiveley technical team utilize an uncompromising, completely wood-free regimen. Fermented entirely with native yeasts and aged on its fine lees for 14 to 16 months in temperature-controlled stainless steel vats, this wine retains maximum precision, high-toned acid line, and genuine terroir transparency.

Highlights

  • 100% Chardonnay hand-harvested from prime, estate-held blocks in the prestigious Vaupulent lieu-dit of Fourchaume.
  • Extended 14-to-16 month stainless steel aging on fine lees captures maximum volume and deep, autolytic complexity.

Tasting Notes

  • Appearance: Bright golden-white core with shimmering pale silvery-green reflections.
  • Nose: Generous, ripe, and beautifully nuanced. It displays rich aromas of poached pear, warm orchard fruits, and lemon preserves, layered with distinct notes of mineral reduction, smoky flint, sea-spray iodine, and a hint of olive oil.
  • Palate: Bone-dry, medium-bodied, and impressively voluminous. The entry is rich and sappy, delivering a mouth-coating, nearly creamy wave of stone fruits across the palate. A precise, driving spine of fresh salinity and marine minerality quickly intervenes, cutting through the solar density and carrying it into a dry, warm, and highly persistent finish.

Serving Suggestion

  • Temperature: Serve slightly cool at 10–12°C. Avoid serving it ice-cold, as the impressive volume and complex right-bank fruit details need a mild chill to properly expand and shine.
  • Decanting: A brief 20-to-30 minute decant is recommended if opening soon to allow the tight-knit smoky reduction to clear and unlock the rich orchard fruit. It possesses superb balance built to cellar comfortably through 2032.
  • Western Pairing: Garlic-herb butter lobster tails, roasted chicken in cream sauce, pan-seared sole with lemon caper butter, or fresh goat cheese.
  • Asian Pairing: Steamed scallops with garlic and glass noodles (蒜蓉粉絲蒸扇貝), wok-fried shrimp, or crystal shrimp dumplings (蝦餃).
