Pure, Caressing, and Classicly Coastal

A glorious testament to the pristine right-bank terroirs of Chablis, the 2023 Domaine Billaud-Simon Les Vaillons Premier Cru effortlessly balances the warm solar profile of the vintage with an underlying, razor-sharp marine identity. It opens with an expressive, beautifully fragrant bouquet of lemon confit, white hawthorn flowers, and a striking oyster-shell reduction. Medium-bodied and extraordinarily dense on the palate, it delivers a rich, caressing texture of ripe nectarine and citrus fruits, perfectly framed by subtle wood integration and a driving line of salty, mouth-watering minerality.

Terroir, History & Acclaim

Critical Recognition:
Burghound [91-93] pts
Jasper Morris [91] pts
  • 91-93 Points - Burghound (Allen Meadows): "Here too there is just enough wood to mention framing the cool and bright aromas of mineral reduction, lemon confit and refreshing sea breeze nuances. There is excellent density, especially for the vintage, to the middle weight flavors that are rich and caressing while maintaining good verve that carries over to the clean, dry and youthfully austere finale. This could use more depth but the fine potential is evident. Lovely."
  • 91 Points ★★★★☆ - Jasper Morris Inside Burgundy: "A lively lemony and lime colour. Very classical bouquet, light on its feet, the typical light citrus wash on pure white stone fruit, a little richer at the back of the palate, fine length. Drink from 2026-2030. Tasted Jul 2025."
  • The Diverse Climats of Vaillons: Billaud-Simon's Les Vaillons is woven from distinct parcels spread across the multi-faceted sub-valleys of this legendary Premier Cru. Notably, the domain benefits from ancient vines up to 95 years old planted in the key sub-climat of Roncières, which infuses the blend with its profound structural density, balance, and aromatic persistence.
  • A New Chapter under Faiveley Mastery: Since 2015, the historic house has entered a golden age directed by Olivier Bailly and overseen by Faiveley's technical director, Jérôme Flous. Preserving the domain's legacy of electric, pure chardonnay, the team utilizes a precise combination of stainless steel tanks and larger, seasoned wood barrels to soften the Kimmeridgian limestone character without masking it in oak.

Highlights

  • 100% Chardonnay hand-harvested from prime, old-vine parcels within the famous Les Vaillons Premier Cru.
  • Meticulously crafted under the modern direction of the Faiveley technical team, maximizing terroir transparency.
  • A gorgeous crossover vintage, combining the natural richness and fleshiness of 2023 with Chablis's classic, mineral focus.

Tasting Notes

  • Appearance: Bright, brilliant white-gold with clear, pale green hues.
  • Nose: Cool, expressive, and strikingly marine. It bursts with refined notes of lemon confit, fresh hawthorn flowers, and orange zest, completely grounded by a deep limestone reduction and crisp sea breeze nuances.
  • Palate: Bone-dry, medium-bodied, and beautifully concentrated. The entry is rich and texturally caressing, unleashing a succulent wave of ripe nectarine, green plum, and citrus fruits. Great underlying verve and natural energy balance the flesh, transitioning into a youthfully austere, completely dry, and stonily detailed finale.

Serving Suggestion

  • Temperature: Serve nicely cellar-cool at 10–12°C. Serving it too cold will hide the gorgeous nectarine and white floral perfumes coaxed by the old vines.
  • Decanting: A brief 20-to-30 minute decant is recommended if opening soon to unravel its youthfully tight, mineral-driven core. This wine possesses an exceptional structure built to cellar elegantly through 2035.
  • Western Pairing: Fresh oysters, steamed crab legs with drawn butter, grilled lobster tail, pan-seared sea bass, or rich Eggs Benedict.
  • Asian Pairing: Steamed garoupa with ginger and scallions (清蒸石斑魚), crystal shrimp dumplings (蝦餃), or salt-and-pepper squid.
