They are fresh and pure with an underlying minerality. The palate reveals notes of citrus combined with spicy aromas (fennel, lime blossom, cinnamon and hawthorn). When harvest time comes the grapes are tasted, carefully picked and taken to the vat-house where they are sorted manually and gently pressed before being vinified and aged at the Domaine.
