- The Cool, Floral Slopes of Blanchots: Positioned on the steep, easternmost edge of the Grand Cru hill, *Blanchots* is unique because it misses the intense late-afternoon sun. Sitting on a high iron-flecked Kimmeridgian clay base, this cooler microclimate coaxes out a highly unique, intensely perfumed, and laced-like silk profile that sets it apart from the blocky muscle of other Grand Crus.
- The Depth of Vieille Vigne: Billaud-Simon’s parcel is composed of old vines (*Vieille Vigne*) that dig exceptionally deep into the ancient marine soil layers. This natural restriction yields small, concentrated berries that imbue the 2023 vintage with a magnificent, mouth-coating sap and depth. Winemaker Olivier Bailly utilizes precise temperature-controlled steel tanks and minimal wood aging to shield the wine's ethereal floral essence and precise oyster-shell line.

- Appearance: Bright, pale straw-yellow with clear, shimmering white-gold highlights.
- Nose: Strikingly aromatic, fresh, and high-toned. It opens with an elegant perfume of white lilies, citrus blossom, and ripe peach, underscored by complex details of sea-spray reduction, crushed gravel, and a touch of sweet olive oil.
- Palate: Bone-dry, full-bodied, and beautifully concentrated. The entry reveals a mouth-coating, nearly creamy wave of stone fruit sap that feels wonderfully seamless across the tongue. A sleek spine of lime-zest acidity swiftly follows, balancing the fruit weight and carrying the silky structure into a clean, highly persistent, and saline finish.
Serving Suggestion
- Temperature: Serve slightly cool at 11–13°C. Avoid serving it ice-cold; a gentle chill is required to let the immense old-vine concentration and delicate white flower aromatics lift properly.
- Decanting: A 45-to-60 minute decant is highly recommended if opening young. The highly detailed fruit benefits immensely from air to unlock its full length. Built to cellar gracefully through 2038+.
- Western Pairing: Butter-poached sole, pan-seared sea scallops, roasted sweetbreads in a light cream sauce, or lobster tail.
