The King of Chablis: Majestic, Stony, and Monumental

The 2023 Domaine Billaud-Simon Chablis Grand Cru "Les Clos" is a breathtaking, multi-layered masterpiece that highlights why this plot is considered the absolute pinnacle of the region. Perfectly capturing the natural richness of the 2023 vintage while retaining an electric, laser-like precision, this wine is built for structural legend. It opens with an aristocratic, tightly wound nose of dried white flowers, lemon rind, lime blossom, and a massive hit of crushed flint and iodine. On the palate, it delivers monumental volume and serious weight, driven forward by a thrilling wave of limestone acidity and an incredibly long, intensely mineral, and salty finish.

Terroir, History & Acclaim

Critical Recognition:
Burghound [93] pts
Jasper Morris [93-95] pts
  • 93 Points - Burghound (Allen Meadows): Subtle wood plays easily allows the overtly floral-suffused aromas of oyster shell, algae, green apple and mineral reduction to shine. The sleek, intense and stony broad-shouldered flavors are also quite seductive thanks to the abundance of sappy dry extract that buffers the firm acid spine shaping the youthfully austere and beautifully long finish. This decidedly compact effort is a very dense 2023, indeed it's almost thick, but the palate impression remains vibrant and balanced.
  • 93-95 Points ★★★☆☆ - Jasper Morris Inside Burgundy: Half wood half tank. Mid lemon yellow. A clean clear and classy bouquet, easier to understand than the embryonic Vaudésir. Pretty classic, showing the typical bench of white fruit, but with a fully ripe spiciness as well. Becomes ever purer as you go back on the palate and is notably persistent. The Kimmeridge character pushes its nose out at the finish. Drink from 2029-2038. Tasted Jul 2024.
  • The Sovereign Majesty of Les Clos: Spanning a uniform, south-facing hillside that bathes in perfect sunlight, *Les Clos* is universally considered the absolute benchmark Grand Cru site of Chablis. Its deep, white Kimmeridgian marl soils are heavily strewn with limestone pebbles, which forces the old estate vines to yield a white Burgundy defined by a legendary mineral concentration, immense power, and unparalleled aging capability.
  • Obsessive Single-Vineyard Artistry: Winemaker Olivier Bailly and the Faiveley group protect this small-production parcel with absolute rigor. To preserve the chiseled stone elements that define Les Clos, the wine is vinified and matured for up to 14 months primarily in steel vats, utilizing an incredibly small fraction of old French oak to subtly round out the mid-palate texture while strictly safeguarding its signature sea-salt transparency.

Highlights

  • 100% Chardonnay harvested from pristine estate plots inside the most iconic Grand Cru climat of Chablis.
  • A monumental, collectors' prize designed with a classic, chiseled structure meant for the deep cellar.

Tasting Notes

  • Appearance: Luminous straw-yellow core with brilliant white-gold and pale platinum reflections.
  • Nose: Aristocratic, deep, and beautifully layered. It opens with an expansive perfume of dried flowers, citrus rind, and lime blossom, tightly wrapped around a massive bedrock of smoky flint reduction, iodine, and wet gravel stones.
  • Palate: Bone-dry, full-bodied, and stunningly concentrated. The entry is vast, flooding the mouth with layers of yellow plum and rich lemon oil. Instantly, a razor-sharp, driving spine of chalky limestone acidity cuts clean through the volume, driving the structural density into a massive, persistent, and intensely salty mineral finish.

Serving Suggestion

  • Temperature: Serve slightly cool at 11–13°C. Do not serve ice-cold; a gentle chill is vital to allow the immense structural volume and dense flint aromatics of Les Clos to uncoil properly.
  • Decanting: A long 1-to-1.5 hour decant is highly recommended if opening anytime in its youth. The tight reduction and crystalline mineral core need significant air to show their full length. Built to age effortlessly through 2045+.
  • Western Pairing: Butter-poached lobster tails, roasted veal chops with white truffles, seared turbot, or pan-seared sweetbreads in cream.
  • Asian Pairing: Steamed whole abalone, sautéed lobster with ginger and scallions, or wok-fried prawns with savory soy reductions.
