The 2023 Domaine Billaud-Simon Les Preuses is a remarkably refined, high-toned Grand Cru white Burgundy that stands as one of the true triumphs of the vintage. Sourced from ancient vines planted in 1952, it trades sheer muscular weight for a cool, airy, and beautifully floating elegance. It opens with a gorgeous, wafting nose of crisp white orchard fruits, acacia blossoms, and a distinctive hint of sea-shell minerality. On the palate, it is medium-bodied yet wonderfully intense, packing a juicy concentration of clean citrus fruit that drives smoothly into a crisp, youthfully austere, and exceptionally long-lasting finish.

  • 94 Points - Burghound (Allen Meadows): A subtle dollop of wood can be found on the cool, airy and elegant, even wafting, nose that blends notes of white orchard fruit, acacia, mineral reduction and shrimp shell nuances. The strikingly textured medium-bodied flavors also brim with sappy dry extract while displaying focused power on the equally compact, youthfully austere and lingering finish. This is very classy, and overall, this beautifully persistent effort is definitely going to need time in bottle because as noted, it's quite compact. I would add that this is one of the best wines of the 2023 vintage.
  • 92-94 Points ★★★★☆ - Jasper Morris Inside Burgundy: The Preuses plot, on granular red soil, was planted 1949, and is still in great health. 52 hl/ha. 25% wood. Pale lemon with a green tint, slightly buttery nose in unexpected contrast. Perhaps it is the cashmere overcoat. There remains a slightly oily texture, which will pass, then the fruit continues into a clean tight finish. Drink from 2029-2036. Tasted Jul 2024.

  • Palate: Bone-dry, medium-bodied, and spectacularly detailed. The entry is silk-textured yet intensely packed with sappy dry extract and fresh citrus confit. A precise, energetic wave of limestone acidity cuts cleanly through the center, framing the fruit and driving it into a youthfully austere, compact, and remarkably persistent mineral finish.

Serving Suggestion

  • Temperature: Serve slightly cool at 11–13°C. Avoid serving it ice-cold; a gentle chill is essential to let the delicate acacia blossoms and old-vine complexity unroll smoothly in the glass.
  • Decanting: A 45-to-60 minute decant is highly recommended if enjoying in its youth. The tight-knit, compact structure needs ample air to loosen its grip and reveal its full length. Built to cellar beautifully through 2040+.
  • Western Pairing: Pan-seared sea scallops with lemon-herb butter, roasted turbot, butter-poached lobster tails, or a light seafood risotto.
  • Asian Pairing: Steamed scallops with garlic and glass noodles, wok-fried crystal shrimp dumplings (蝦餃), or delicate white-fish sashimi.
