Pure Mineral Power and Crisp Elegance

The 2022 Domaine Billaud-Simon Valmur is a stunning, deeply concentrated Grand Cru white Burgundy built for true fans of classic Chablis. Sourced from 50-year-old vines, it beautifully balances the natural warmth of the vintage with a tight, chiseled structure. It opens with bright aromas of fresh lemon peel, white flowers, and a signature smoky, sea-spray minerality. On the palate, it is full-bodied and intense, yet incredibly crisp, driving into a clean, mouth-watering, and long-lasting finish.

Terroir, History & Acclaim

Critical Recognition:
Burghound [92-94] pts
Jasper Morris [91-94] pts
  • 92-94 Points (Sweet Spot) - Burghound (Allen Meadows): Once again moderate wood is present on the cool if ripe and vaguely exotic aromas that feature notes of pear liqueur, green fruit, spice and seashore hints. There is almost painful intensity to the larger-scaled and overtly powerful flavors that terminate in a chalky, youthfully austere and compact finale that also flirts with rusticity. This is impressive and very much a classic Valmur.
  • 91-94 Points ★★★☆☆ - Jasper Morris Inside Burgundy: Valmur receives the same as Bougros for elevage, so no oak thus far.. Glowing fresh pale yellow. An interesting zesty citrus rind nose, unexpected for me or this vineyard. A rich texture on the palate shows the grand cru, ripe citrus notes, if a little heavy in the flesh. Drink from 2028-2034. Tasted Jul 2023.
  • The Unique Valmur Valley: Tucked into a steep valley running through the heart of the Grand Cru hill, *Valmur* benefits from a dramatic climate. Billaud-Simon’s parcels sit in this cool basin, combining south and north-facing slope exposures to lock in electric freshness while forcing 50-year-old vines deep into classic Kimmeridgian limestone soils.
  • Careful Cellar Craft: Under the guidance of winemaker Olivier Bailly and the Faiveley group, these old vines are handled with exceptional care. The wine is aged for up to 14 months in a precise split of stainless steel tanks and older, neutral French oak barrels, adding a seamless texture without masking the wine's hallmark oyster-shell precision.

Highlights

  • 100% Chardonnay harvested from ancient, 50-year-old estate vines in the heart of the Grand Cru hill.
  • A highly collected, broad-shouldered white Burgundy showing incredible mineral concentration and razor-sharp lines.

Tasting Notes

  • Appearance: Shimmering, bright straw-gold with clear, pale silver-green flashes.
  • Nose: Deep, tightly wound, and brilliantly chiseled. It slowly opens with aromas of white flowers, fresh lemon peel, and ripe pear, grounded by intense notes of flinty smoke, sea salt, and iodine.
  • Palate: Bone-dry, full-bodied, and beautifully focused. The entry is powerful, coating the tongue in concentrated citrus and stone fruit oils before a massive wave of limestone acidity takes over. It slices cleanly through the solar weight of the vintage, finishing on a long, refreshing, and stony mineral high note.

Serving Suggestion

  • Temperature: Serve slightly cool at 11–13°C. Avoid serving it ice-cold; a mild chill is required to let the massive structural layers and dense fruit flavors breathe and expand.
  • Decanting: A 1-to-1.5 hour decant is highly recommended if opening young. The serious mineral structure needs plenty of air to fully uncoil. Built to cellar beautifully through 2042+.
  • Western Pairing: Butter-poached lobster, roasted veal chops in chanterelle cream, pan-seared turbot, or grilled prawns.
  • Asian Pairing: Sautéed lobster with ginger and scallions, wok-fried prawns with salted egg yolk, or delicate steamed abalone.
