From Champagne Drappier in the Aube subregion of Champagne, the Clarevallis NV is a refined 100% Chardonnay sourced from the estate's 75 hectares of organically farmed vineyards on limestone-rich soils that impart exceptional freshness and structure. Hand-harvested grapes undergo gentle pressing and fermentation in stainless steel tanks, followed by secondary fermentation in the bottle with extended lees aging of at least 36 months to develop complexity and finesse. Named after the Cistercian abbey of Clairvaux, this limited cuvée yields a pale gold sparkling wine with persistent fine mousse and remarkable purity.

Tasting Notes An elegant, mineral-driven sparkling with vibrant citrus and chalky finesse, reflecting Champagne's limestone terroir. The nose reveals lemon zest, white peach, white flowers, and hints of oyster shell and brioche. On the palate, it is medium-bodied and vibrant, with crisp acidity, fine bubbles, and flavors of grapefruit pith, green apple, and flinty minerality, leading to a long, saline finish.
