This is the best part of the Santenots appellation, formerly classified as "tête de cuvée" by Doctor Lavalle. In several plots that Jules Lafon (great-grandfather of Dominique and founder of the estate) bought successively, it is in all 3.8 ha of vines. Exposed East, of very clayey red earth, shallow on a hard limestone subsoil, the site is very sunny and precocious. The average age is over 30 years, the oldest vines are 60 years old, the youngest 3 years old. The wines are very colorful, rich, deep, with present tannins, but beautiful elegance on the finish. Aromas of black fruits dominate: blackberry, blackcurrant, cherry. More power than in most Volnays, it is a wine to keep (10 to 20 years).
