What is special about this wine?

Unlike most sparkling wine which undergone two fermentation (one for alcololic fermentation and another for the formation of bubble), this wne is produced by methode ancestrale with only one fermentation in bottle.  In addition, while most bottle fermented sparkling will have dosage to add sweetness and disgorgement to remove the lees, no liqueur d'expedition is added and the residual sugar (around 20 grams) in this wine are from their natural sweetness (not added during the process of dosage).  Since there is no disgorgement, the wine will have some fine lees giving the wine a slight hue and cloudiness on the visual.

1st sorting of healthy and golden grapes, harvested at the beginning of September, i.e. 2 to 3 bunches per vine. We choose to harvest Chenins at good maturity (13%/vol potential) to offer a vinous balance capable of harmonizing with our beautiful gastronomy.

The Ancestral Blanc is always Brut Nature and Vintage, characterized by aromas of very ripe white fruits (pear) and the palate is smooth with creamy bubbles.
