Les Levrons lies at the foot of Puligny's steep hillsides just below 1er Cru Les Perrières, with clay-limestone soils providing both richness and tension. From Javillier's 10-ha Meursault-based domaine, hand-harvested Chardonnay undergoes barrel fermentation with indigenous yeasts, extended lees aging (12-15 months), and oak maturation following his terroir-blending philosophy, yielding refined Côte de Beaune whites at 13% alcohol.
Tasting Notes
Pale straw hue; pure aromatic bouquet of hawthorn, hazelnut, amber, lemongrass, apple, mineral, and milky notes. Well-balanced palate combining grace, well-marked personality, remarkable concentration, and pleasant freshness throughout.
Serving and Cellaring
Serve at 11-13°C in a Chardonnay glass (8-10°C per some sources). Drink from 2024-2032 for optimal complexity; pairs with shellfish, grilled fish, or white meat in cream sauce.
