Sea Spray, Ripe Citrus, Broad-Shouldered Muscle, and Pure Chablis Grand Cru Power

The 2024 Domaine William Fèvre Chablis Grand Cru "Bougros" is a deeply structured, mineral-driven white crafted from a magnificent six-hectare holding in one of Chablis’s warmest grand cru sites. Sourced primarily from gentle slopes, it unveils aromas of iodine, oyster shell, sea breeze, and lemon-lime fruit. Medium-to-full-bodied and impressively concentrated, it marries broad-shouldered weight with a keen backbone of acidity, concluding on a long, austere, and intensely persistent finish.

Terroir, History & Acclaim

Critical Recognition:
Jasper Morris (Inside Burgundy) 90–93 pts
Allen Meadows (Burghound) 92–95 pts
  • 90–93 Points - Jasper Morris MW (Inside Burgundy): A yield of 12 hl/ha. Lemon and lime in colour. There is a certain power, but not vast weight either. Precision and freshness, says Didier Seguier. Still a light peachiness and a little salty bitterness behind. The Bougros has really not yet developed its full potential, but shows promise. Drink from 2029-2034. Tasted Jul 2025 by Jasper Morris MW.
  • 92–95 Points - Allen Meadows (Burghound): This too instantly makes its origins clear with aromas of iodine, algae, ocean breeze and shrimp shell. As one might reasonably expect, there is markedly more size, weight and muscle to the broad-shouldered flavors that conclude in a compact, youthfully austere and highly persistent finale. This is a classic Bougros that is undeniably built-to-age and a wine that's going to need it.
  • The Bougros Grand Cru Terroir: Domaine William Fèvre is the largest landowner in Bougros, controlling roughly 6 hectares. Situated on the westernmost edge of the grand cru hill where the soils are deep and clay-rich over Kimmeridgian limestone, the site yields wines renowned for their rich texture, fleshiness, and approachable power.
  • Didier Séguier’s Precision Winemaking: Under technical director Didier Séguier, the estate practices sustainable, near-organic farming. Vinification utilizes a thoughtful balance of stainless steel and French oak barrels (with limited new oak) to respect the purity of the fruit, vibrant natural acidity, and definitive Chablis minerality.

Highlights

  • 100% Chardonnay from Domaine William Fèvre’s extensive grand cru holding in Bougros.
  • Crafted with precision under the guidance of esteemed winemaker Didier Séguier.
  • A classically structured, low-yielding 2024 vintage built for serious cellaring through 2035–2045+.

Tasting Notes

Brilliant lemon-lime in appearance, it opens with reticent yet marine-infused aromas of iodine, oyster shell, crushed slate, and subtle white peach. The palate is medium-to-full-bodied, displaying notable weight, power, and muscle, balanced gracefully by a crisp line of citrus acidity and a savory, saline-drenched finish that demands patience.

Serving Suggestion

  • Temperature: Serve chilled at 11–13°C in large white wine glasses rather than narrow flutes.
  • Decanting: Decant for 1 hour if opening in its youth to allow its tightly wound structure and marine aromatics to expand. Best enjoyed from 2029 through 2042+.
