Hand-harvested grapes undergo pneumatic pressing (1.5-2 hours), light settling, natural fermentation; 50-60% aged 14-16 months in neutral oak barrels (avg. 6 years old, with fine lees stirring), balance in stainless steel for freshness, reaching 13% alcohol through organic practices.
Tasting Notes
Well-defined bouquet of subtle undergrowth, wild fennel, dried orange rind, crisp orchard fruit, warm bread, and beeswax. Medium- to full-bodied palate with sapid entry, gentle grip, sour lemon, ginger, white pepper, layered texture, huge chalky structure, racy acidity, and intensely persistent mineral finish.
