William Fevre's Les Preuses holdings (22% of the appellation) feature old vines on high-clay soils above Bougros, yielding concentrated Chardonnay. Hand-harvested grapes undergo pneumatic pressing (1.5-2 hours), light settling, natural fermentation; 50-60% aged 14-15 months in neutral oak barrels (avg. 6 years old) with lees stirring for texture, balance in stainless steel, bottled at 13% alcohol through first-year organic certification.
Tasting Notes
Pure pale green hue with electric aromas of citrus oil, baked bread, oyster jus, wet stones, pear, apple, anise, quinine, and seashore essence. Full-bodied, satiny, and chiseled with racy intensity, bright acidity spine, mouthcoating medium-weight flavors, searing minerality, granular texture, and a bracingly saline, hugely persistent finish.
