Valmur's valley-like amphitheater (from Latin "valle murmure") produces structured wines from Fèvre's multiple plots; 2020's low yields were hand-harvested, fermented in stainless steel and oak, and lees-aged by the sustainable HVE3-certified domaine. This full-bodied Chablis captures Kimmeridgian chalk intensity and the vintage's balance of ripeness (11.8-12.9% alc.) with vibrant pH 3.1-3.2 freshness.
Tasting Notes
Pale primrose; opulent nose of peach, floral notes, citrus rind, sea breeze, and quinine. Broad-shouldered palate delivers apple, pear, beeswax, limestone minerality, grapefruit acidity, searing salinity, and penetrating, persistent finish with oyster shell vibrancy.
