Sourced from the Toriibira vineyard (high-elevation, gravelly limestone soils). Hand-harvested Koshu grapes gently whole-cluster pressed, fermented with native yeasts in stainless steel and neutral oak at cool temperatures. Extended lees aging preserves freshness and texture. Bone-dry style emphasizing terroir transparency at 11.5-12% ABV.

Tasting Notes
Pale straw-green; yuzu, green apple, white peach, jasmine, wet stone, flint. Medium-bodied with racy acidity, saline minerality, delicate fruit purity, and long refreshing citrus finish.

Serving and Cellaring
