From family-owned Henri Bourgeois in Chavignol, this Pouilly-Fumé sources Sauvignon Blanc from flinty silex soils across the appellation. Gentle pneumatic pressing, static settling and low-temperature (15-18°C) stainless steel fermentation preserve aromatics, followed by 5-6 months lees aging for texture before bottling.
