Terroir & Winemaking Reality
- The Stony Terroir of Craipillot: Covering less than three hectares in total, "Craipillot" is an intimate, highly regarded Premier Cru lieu-dit positioned just below the village church at the opening of the Combe de Lavaux. Its name stems from *craie* (chalk), referencing the shallow, stony, limestone-heavy soils that define the plot. The cool airflow descending from the valley endows the vines with exceptional aromatic lift and crisp freshness, counterbalancing Gevrey's natural power with rare elegance.
- The Humbert Frères Old-School Craft: Brothers Emmanuel and Frédéric Humbert farm their tiny 0.13-hectare parcel of old Pinot Noir vines with deep traditional reverence. In the cellar, careful cold maceration precedes natural fermentation to capture pure fruit aromatics. Aged in a significant proportion of new French oak barrels, the 2017 bottling has now absorbed its wood structure completely over time, yielding a beautifully harmonious, complex Premier Cru in peak drinking form.
Highlights
- 100% Pinot Noir estate-harvested from old vines in the tiny, stony Craipillot Premier Cru vineyard.
- Crafted by the acclaimed Domaine Humbert Frères, masters of authentic, structured, yet refined Gevrey-Chambertin.
- A beautifully aged 2017 vintage offering prime tertiary complexity, silky tannins, and complete structural integration.
Tasting Notes
- Appearance: Translucent, medium ruby-red core with gentle bricking and garnet reflections at the rim.
- Nose: Complex, mature, and deeply savory. It opens with aromas of dried red cherries, wild raspberries, and crushed cranberries, evolving into tertiary layers of forest floor, cured leather, dried rose petals, game, and subtle cedar oak spices.
- Palate: Dry, medium-bodied, and remarkably smooth. The entry brings a soft wave of savory red fruit and plum essence, supported by melting, fine-grained tannins. Fresh, integrated acidity keeps the palate vibrant and long, leading into a refined, earthy, and lingering finish.
Serving Suggestion
- Temperature: Serve slightly cool at 15–16°C. A gentle, cellar-like chill highlights the complex tertiary aromas and keeps the delicate mature fruit fresh.
- Decanting: A short 15-to-20 minute decant or gentle opening in the glass is sufficient. Given its age and resolved state, avoid extended decanting. In peak drinking window now through 2030.
- Western Pairing: Slow-roasted duck breast, pan-seared pheasant, roasted rack of lamb with herbs, beef Bourguignon, or earthy wild mushroom dishes.
- Asian Pairing: Peking duck with savory plum sauce, braised duck with chestnuts, Cantonese barbecued pork (Char Siu), or stir-fried beef with scallions and ginger.
