La Petite Chapelle is a small premier cru parcel in Gevrey-Chambertin with clay-limestone soils, farmed by the Guillon family using hand-harvest, leaf stripping, and green harvesting. Signature 100% new French oak aging (13-15 months) inspired by mentor Henri Jayer builds structure while preserving site character, yielding concentrated wines at around 13.5% alcohol suited to extended cellaring.
