La Petite Chapelle lies just downslope from Grand Cru Chapelle-Chambertin on well-drained limestone-clay soils, giving both power and finesse. The 2019 vintage in Gevrey Chambertin was warm and low-yielding, concentrating fruit and tannins; Guillon is known for ripe picking, cold soaks and substantial barrel élevage, so expect a relatively robust style within a refined Premier Cru frame at around 13–14% alcohol, with pronounced site character and age-worthiness.
Tasting Notes
The nose is elegant, ripe and alluringly cool, with notes of plum essence, black cherry, violets and plenty of spice, all trimmed in soft wood influence. The palate is smooth, finely detailed and very pure, medium in body but mineral-saturated, with taut structure, refined tannins and a tight, persistent, youthfully firm finish that will benefit from further bottle age.

Serving and Cellaring
Serve at 15–16°C in a Burgundy glass after 60–90 minutes of decanting in the next few years to help unwind the structure. Drink from roughly 2027–2040, pairing with duck, game birds, mushroom dishes or roasted lamb to complement its depth and Gevrey spice.
