From old vines (50+ years) on limestone-clay soils in this southern Gevrey 1er Cru, hand-harvested Pinot Noir undergoes manual sorting, cold soak, and fermentation with 65% whole clusters. Aged 13-15 months in 100% new French oak barrels, Guillon's signature ripe, hedonistic style emphasizes power, purity, and longevity through meticulous vineyard work and extended élevage at ~13.5% alcohol.
Tasting Notes
Carmine-red with ruby reflections featuring red currant, cherry, violets, spice, and subtle oak. Medium-bodied with dense yet fine tannins, firm structure, savory minerality, and a long, balanced finish showing fruit purity and youthful tension.
