Les Champonnets is an 8-acre Premier Cru just south of Gevrey-Chambertin village on the northern edge of the Grand Cru hillside, from old vines vinified by Jean-Michel Guillon using his signature 100% new French oak approach (inspired by Henri Jayer) for structure while emphasizing terroir. Hand-harvested grapes ferment traditionally with gentle extraction, followed by 12-18 months aging in barriques, yielding concentrated yet elegant wines at around 13.5% alcohol suited to medium-term cellaring.
Tasting Notes
Moderate wood frames aromas of wild strawberry, raspberry, pomegranate, vanilla, and fine oak; medium to full-bodied palate with dense mid-palate, bracing minerality, fine-grained tannins, and a beautifully long finish. Other notes include cherry, smoke, and subtle spice with good freshness and verve.
Serving and Cellaring
Serve at 15-17°C in a Burgundy glass; decant 1 hour. Drink from 2026-2035 for silky evolution and complexity; pairs with roasted poultry, veal, mushroom dishes, or soft-ripened cheeses.
