Sourced from limestone-rich Les Murots and La Platière plots within Gevrey-Chambertin, hand-harvested grapes from Domaine Jean-Michel Guillon (15+ ha estate founded 1980) undergo rigorous sorting, temperature-controlled stainless steel fermentation, and 15 months aging in entirely new French oak barrels—a signature technique inspired by mentor Henri Jayer. This approach builds depth while preserving purity, yielding 20,850 bottles at 13.5% alcohol from the challenging yet balanced 2021 vintage.
Tasting Notes
Deep ruby hue; aromas of red currant, raspberry, blackcurrant, oak, and spice. Medium to full-bodied palate with silky texture, well-integrated tannins, elegant balance, and a persistent, refined finish.
Serving and Cellaring
Serve at 14-16°C in a Burgundy glass; decant 30-60 minutes. Drink from 2026-2033 for optimal evolution; pairs with roasted duck, veal, game birds, coq au vin, mushroom risotto, grilled salmon, or aged cheeses like Comté.
