Les Champs Perdrix is among Marsannay's highest vineyards at 350+ meters, with old vines (40+ years) rooted in shallow rocky topsoil over pure limestone, providing exceptional drainage and minerality. Hand-harvested Chardonnay undergoes barrel fermentation with indigenous yeasts, partial malolactic (around 50%), and aging in oak (20% new French barrels) for 10-12 months, yielding elegant, structured white Burgundy at 13% alcohol suited to medium-term cellaring.
Tasting Notes
Pale yellow-green; aromas of lemon balm, poached pear/apple, melon, white flowers, and subtle hazelnut oak. Mid-weight palate with creamy texture, stony minerality, vibrant tension, herbal freshness, and a dry, persistent, slightly rustic finish.
Serving and Cellaring
Serve at 11-13°C in a Chardonnay glass. Drink from 2026-2032 for evolving complexity; pairs with shellfish, grilled fish, creamy poultry, goat cheese, or lobster.
