Dark Cherries, Violet Petals, Whole-Cluster Spice, and Pure Organic Elegance

The 2021 Domaine Jean-Pierre Guyon Nuits-Saint-Georges "Aux Herbues" is a radiant, finely sculpted Pinot Noir crafted with meticulous certified organic viticulture. Fermented with 100% whole clusters, it reveals vibrant aromas of ripe black cherries, wild raspberries, crushed violets, and exotic spice. Medium-bodied and silky, it balances succulent dark fruit against fine-grained, lacy tannins and bright cool-vintage acidity, culminating in a persistent, mineral-etched finish.

Terroir, History & Acclaim

Critical Recognition:
Jasper Morris 90–92 pts
Burghound 88–91 pts
  • 90–92 Points - Jasper Morris (Inside Burgundy): Another vivid bright purple. Darker fruit on the nose and much less coconut oak, though a little starts to emerge later. Lifted red fruit alongside the dark plums, good acidity, and impressive persistence. Plenty of fruit here, once again. Drink from 2025-2030. Tasted Nov 2022 by Jasper Morris MW.
  • 88–91 Points - Allen Meadows (Burghound): A markedly spicy nose reflects notes of newly turned earth, red cherry and a hint of the sauvage. The rich and relatively full-bodied flavors also possess excellent mid-palate volume while exhibiting solid length on the vibrant, balanced and slightly rustic finale.
  • The "Aux Herbues" Climat: Positioned in the northern sector of Nuits-Saint-Georges bordering Vosne-Romanée. The deep alluvial clay and fine limestone soils yield a Pinot Noir with the seductive fragrance, silky texture, and refined elegance often associated with Vosne rather than the rustic muscle of southern Nuits.
  • Artisanal Whole-Cluster Philosophy: Jean-Pierre Guyon farms with certified organic methods and vinifies with 100% whole clusters, crushing the grapes delicately with feet. The wine sees minimal sulfur additions and ages in high-quality French oak, coaxing out velvety tannins, complex floral aromatics, and extraordinary textural purity.

Highlights

  • 100% Pinot Noir from "Aux Herbues," situated directly on the Vosne-Romanée border.
  • Certified organic, 100% whole-cluster vinification; prime drinking window 2026 through 2036+.

Tasting Notes

Brilliant ruby in color, it opens with pure, lifted aromas of ripe dark cherries, red plums, and fresh violet pastille, intricately woven with whole-cluster spice, black tea, and crushed stones. The palate is medium-bodied and silky, delivering a seamless core of dark and red fruit framed by ultra-fine, supple tannins and mouth-watering acidity, finishing with lingering floral perfume and chalky precision.

Serving Suggestion

  • Temperature: Serve at 15–17°C in wide Burgundy stems.
  • Decanting: Decant for 30 to 45 minutes to let its whole-cluster aromatics fully unfold. Best enjoyed through 2036.
