The estate fruit comes from Simonsberg slopes in Stellenbosch, where decomposed granite and Hutton soils, low yields, and mature vines give the wine its concentration and depth. Kanonkop typically ferments this wine in concrete with regular punchdowns, then matures it in French oak, which adds spice and frame without masking the fruit.
Tasting Notes
Expect deep purple-black color, ripe black cherry, plum, blackberry, violets, licorice, cedar, cocoa, and baking spice. The palate is dense and powerful but balanced by fresh acidity and fine-grained tannins.
Serving and Cellaring
Serve at 16-18°C, ideally with a short decant. Drink now through the next decade, and pair with grilled lamb, game, steak, or slow-cooked meats.
