The Cote de Beaune Villages is a good intermediary between a regional appellation wine and a village. The cuvee produced by Maison Louis Jadot comes mainly from the villages of Chorey les Beaune and Ladoix Serrigny, Maranges and Santenay. The harvest is manual in a small box to preserve the integrity of the fruit. The grapes are then carefully sorted by hand and then destemmed. The maceration of the grapes takes place in open wooden or stainless steel vats for 3 weeks to 4 weeks. The vats are picked twice a day during fermentation. Aging lasts about 18 months in the barrels of our cooperage, about a third of which are new.

This appellation can be claimed from all the villages of the Côte de Beaune area except for four : Aloxe Corton, Beaune, Pommard and Volnay. The Côte de Beaune Villages is a good intermediary wine between regional Burgundy and Crus wines.

The grapes bear small little dark red berries. The bunches are destemmed; they macerate in open vats during 4 weeks helping this subtle terroir to reveal itself. After devatting, the wines are aged in oak barrels during 18 months.
