Jadot Gevrey Chambertin wines are produced from vineyards lying on the extension of the slope on which the Grands and Premiers Crus are situated. These vineyards vary considerable in quality, and the name of the producer is thus more important here than elsewhere. Maison Louis Jadot vinifies the production of growers with whom it holds purchase agreements based on the quality of the harvest each year. The harvest is manual in small crates in order to preserve the integrity of the fruit. The grapes are then carefully sorted by hand and then destemmed. The grapes are macerated in open wooden or stainless steel vats for 3 to 4 weeks. The vats are punched twice a day during fermentation. Aging lasts about 18 months in our cooperage's barrels, about a third of which are new.
