(Wine Advocate SCore 93-95) The 2011 Volnay 1er Cru Les Caillerets that is again from limestone soils, has a generous bouquet with beautiful, expressive red currant and fresh strawberry fruit with superb delineation. The palate is medium-bodied with fine tannins, very well-judged acidity and a seemingly effortless finish that exudes finesse. This is one of Mornir’s finest offerings.

Lucien le Moine is known for producing hand-crafted wines that are made with a minimalist approach. Never racking, no pumps, very low levels of SO2 and a heavy emphasis on working with the fine lees.

The natural CO2 from the malolactic is present even in bottle. In fact we are looking for this presence as it helps protecting the wine in the most natural way.
The CO2 protects the wine by closing it upon itself that is why ALL OUR WINES MUST BE DECANTED. With decanting CO2 will leave and the wine will show itself. If one has time decanting can be for a few hours, if not a few minutes: by pouring the wine into the decanter and moving it slowly allowing the gas to leave.
